Olio De Carlo is one of Puglia’s most historic olive oil producers, with roots dating back to the early 1600s in Bitritto, near Bari.  For over four centuries, the De Carlo family has cultivated native cultivars like Coratina with a commitment to both tradition and precision—harvesting early, milling within hours, and preserving the full character of the fruit.  What sets De Carlo apart is their ability to consistently produce high-polyphenol, intensely expressive oils that reflect the Puglian terroir—red soils, Mediterranean climate, and centuries-old trees—while maintaining exceptional balance and clarity.

About This Olive OilTenuta Torre di Mossa is the historic estate at the heart of the De Carlo family’s production—the birthplace of this iconic DOP-certified oil. Produced from 100% Coratina olives, this 2025 harvest is a powerful, structured expression of Puglia’s most celebrated varietal—known for its naturally high polyphenol content and bold sensory profile. The oil opens with freshness and depth, then builds into a decisive bitterness and long, peppery finish—hallmarks of a serious, early-harvest Coratina. Harvested in Fall 2025 and cold-extracted, it is designed as a finishing oil for dishes that can carry intensity and structure.
