Palazzo di Varignana is a modern Italian agricultural estate rooted in restoration, sustainability, and precision farming. Founded in 2015 in the hills outside Bologna, the project transformed dormant land into one of the largest olive-growing estates in Emilia-Romagna—blending traditional cultivars with advanced production techniques to create oils recognized internationally for quality and balance.

With tightly controlled harvesting and rapid milling near the groves, their oils consistently capture the freshness, vitality, and aromatic complexity of early-harvest olives.

This is a true monocultivar Maurino, a variety prized for its aromatic elegance and refined structure. Harvested early while the olives are still green, it delivers a vibrant, high-definition expression of the cultivar—fresh, structured, and beautifully balanced.

Compared to more aggressive southern Italian oils, Maurino leans into clarity and finesse—layered vegetal notes, floral lift, and a clean, persistent pepper finish that signals freshness and polyphenol presence.
