Compagnia del Montale is a family‑run acetaia based in the heart of Modena, where authentic balsamic vinegar has been produced for centuries. The Montale family carries forward generations of Modenese vinegar‑making tradition, crafting both Aceto Balsamico di Modena IGP and Traditional Balsamic Vinegar of Modena DOP. Made exclusively from locally grown Lambrusco and Trebbiano grape must, their balsamic vinegars are aged patiently in wooden barrels with no additives, caramel coloring, or shortcuts. Saba is a traditional Italian specialty made by slowly cooking fresh grape must until it naturally thickens and concentrates. This product is not vinegar. It is sweet, rich, and smooth, with no acidity and no fermentation.
Produced by Compagnia del Montale, this Saba is made using 100% grape must, gently cooked over time to develop deep, natural sweetness. Nothing is added and nothing is removed.
