The Montale family carries forward generations of Modenese vinegar‑making tradition, crafting both Aceto Balsamico di Modena IGP and Traditional Balsamic Vinegar of Modena DOP. Made exclusively from locally grown Lambrusco and Trebbiano grape must, their balsamic vinegars are aged patiently in wooden barrels with no additives, caramel coloring, or shortcuts. The result is a collection of balsamics prized for balance, depth, and purity—expressions that reflect Modena’s terroir and the Montale family’s commitment to time‑honored craftsmanship.

This aged balsamic vinegar reflects a long‑standing local tradition of transforming cooked grape must into a balanced, naturally sweet condiment. “Vigna Oro” is made using cooked grape must and wine vinegar, then aged in wooden barrels to develop depth, smooth acidity, and a dense, glossy texture.

This balsamic is designed for finishing rather than cooking. A small amount adds richness and complexity without overwhelming a dish. The flavor is well‑rounded, with gentle sweetness followed by clean acidity, making it versatile for both savory and sweet applications.
