Compagnia del Montale is a family‑run acetaia based in the heart of Modena, where authentic balsamic vinegar has been produced for centuries. The Montale family carries forward generations of Modenese vinegar‑making tradition, crafting both Aceto Balsamico di Modena IGP and Traditional Balsamic Vinegar of Modena DOP. Made exclusively from locally grown Lambrusco and Trebbiano grape must, their balsamic vinegars are aged patiently in wooden barrels with no additives, caramel coloring, or shortcuts. The result is a collection of balsamics prized for balance, depth, and purity—expressions that reflect Modena’s terroir and the Montale family’s commitment to time‑honored craftsmanship.

Crafted in Modena under official PGI (IGP) regulations, Vigna Bordò is a vineyard‑driven balsamic designed for real food — not industrial sweetness. Made from cooked grape must and wine vinegar, then aged in wooden barrels, it delivers a clean balance of acidity and natural grape richness that chefs and home cooks actually use every day.

Unlike mass‑market PGI balsamics, Vigna Bordò focuses on structure, freshness, and versatility. The flavor is rounded but lively, with gentle sweetness, restrained density, and a long, savory finish — ideal for finishing dishes rather than masking them.
This is the balsamic we reach for when a dish needs lift, contrast, or clarity.
