Acetaia Cattani is a family-run acetaia located in Modena, the historic heart of true balsamic vinegar production. Known for their attention to barrel selection and aging techniques, the Cattani family combines tradition with thoughtful innovation—such as olivewood maturation—to create balsamic vinegars that are expressive, balanced, and unmistakably Modenese.

Using the same meticulous care as traditional balsamic, White Balsamic Vinegar offers a brighter, lighter expression while remaining firmly rooted in classic Italian methods. Made from cooked white grape must and wine vinegar, it is gently aged to preserve its pale golden color and fresh acidity.

The result is a refined, delicately sweet vinegar with floral and fruit‑forward notes—ideal when you want depth and balance without altering the color of a dish.
